Couscous Creation!

So I was looking through my fridge at lunch time today and realized I was feeling unusually creative.  We had alot of left overs hanging around that I was feeling guilty about so I decided to combine some if it.  the result:

Odds-n-Ends Couscous

1 1/2 cups prepared couscous (I make mine with some garlic salt in it)
1/2 a bag of "Green Giant- Garden Vegetable Medley" frozen
-This stuff is great by itself! It has sugar snap peas, roasted potatoes, and red peppers coated in this really good herb/garlic sauce. And its only 70 calories per serving!

1 can of chicken
1/4 cup baby corn (snapped into 3/4 inch sections)


Put the chicken (drained) in a wok on med heat.  separate chicken peices with wooden spoon and add veggie mix.  Stir fry till mix is melted and hot.  Add couscous and baby corn. Mix well.


Jesse even liked it which is saying alot because he usually doesn't like my couscous dishes! Its quick, easy, and well rounded. I'm quit proud of myself for making it up =)
